What Grade of Maple Syrup Works Best in Beverages and Drinks?

From kombucha to sports drinks to spirits, maple syrup is used to sweeten and/or flavor beverages and drinks.

If you’re looking to add a clean, sustainable ingredient to your beverage’s flavor profile, your first step is to consider which grade of maple syrup will work best for your needs. Each of the 4 grades of maple syrup have different color and intensity of flavor. Choosing the wrong grade can overwhelm (or underwhelm) other flavors and even change the color of your drink or beverage.

In general, lighter beverages such as teas and juices want a lighter grade maple syrup like Golden Color, Delicate Taste or Amber Color, Rich Taste. More full-bodied beverages such as kombucha and beer need a stronger flavored maple syrup like Dark Color, Robust Taste in order to have the maple taste noticeable. Lighter-colored beverages like vodkas need a lighter-colored maple syrup that won’t darken the color.

Also important to consider is invert sugar. All grades of maple syrup contain some, however the amount depends upon the grade used.

Generally, maple syrups produced later in the season contain more invert sugar—so Grade A Golden Color, Delicate Taste will have less invert sugar than Grade A Very Dark Color, Strong Taste.
