We’ve been in the maple business for eight generations now, and we’ve spent years refining our process.
We begin by selecting a full-flavored, dark-colored, 100% pure natural or organic maple syrup that meets our strict specifications. The maple syrup is pumped into a pressurized vessel, cooked, and stirred until the water in the maple syrup has evaporated. To ensure product purity, we never use chemicals or flow agents in our process. After the water has evaporated, pieces of maple crystals remain. We grind the crystals into smaller pieces to get a consistent product.

Both our pure maple sugar and organic maple sugar are made the same way. We evaporate the water out of our maple syrup and grind the remaining crystals into granules and powder. We never use chemicals or flow agents in our process. Both our pure maple sugar and organic maple sugar are roughly 95% sucrose.
The difference lies in the type of maple syrup chosen to make the maple sugar. Organic maple sugar is made from only 100% certified organic maple syrup, while pure maple sugar is made from pure maple syrup.
And the difference between pure and organic syrup? It comes down to the (extensive) certification process our organic maple farmers go through in order to assure their maple syrup is certified organic.
